Interesting... whenever I can find them, I love eating sunchokes - a root from a variety of sunflower. Just wash them, nuke 'em for a couple minutes, cut open and throw some gouda on them and nuke another 30 seconds.  Great alternative to potatoes for diabetics.

Update: My A1C in late April was 4.9, and was going down steadily for a couple of years.

Since we had a conversation going about pimento cheese the other day, I decided to make my favorite menu item from The Varsity (except for the FO, a frozen orange drink that's awesome)...the "restaurant" is a famous greasy spoon here in ATL. 

 

I didn't get the "spread", I got the real Palmetto pimento cheese stuff.

Oh, and what most folks don't know...most real Mexican restaurants use Land O Lakes white American (or Sol brand through the distributor, but LOL is available in stores) for everything.  (It's what I use.) 

You can even make a soup out of it.  Throw in Cal Medley veggies.  Garlic toast, GO!!
