On the weekends, they're served on the plate, with butter, salt, pepper and a couple of fried eggs on top. I'll have to try your weekend dish. I have to watch sweets so the brown sugar/maple syrup is out. I don't even have brown sugar in the house. I go through 2lbs of sugar in a year maybe. I usually buy sweets. Easier to control. Update: tried the grits with a fried egg this morning, it was great! A new favorite. My daughter is bringing me some groceries this afternoon, really need some staples and other stuff. I prefer St. Louis style ribs, meatier, cheaper and forgiving. dry rub, pre smoking. after 3 hours of heavy smoke. after 2 more hours of braising. Wrapped in time foil with apple juice, brown sugar and butter. finished product after 1 more hour of light smoke after smothering with BBQ sauce. plated with garlic green beans. They were so tender if you gave them an angry scowl the meat would fall off the bone. My daughter picked one up and it just fell apart. I like them that way.
