Mr. S Posted March 29, 2009 Share Posted March 29, 2009 the dough makes or breaks the entire Pizza, good dough makes a good crust which holds everything else yeh, Alton Brown even said it on Good Eats that it people are mistaken when they assume sauce or toppings make the pizza. chow184 Posted March 29, 2009 Share Posted March 29, 2009 cheese a pizza without a good cheesey flavor is mediocre. crust just needs to have good texture and a nice flavor and a thinly applied but zesty sauce , too often I eat pizzas with decent cheese flavor and decent crust,and while I can see red sauce,all I taste is cheese and bread. They can DEFINITELY make or break a pizza. Nah, cause then it becomes a debate about what the better toppings are. Had this debate with my boss last night, I said sauce, she said crust. You could have a pizza with just tomato sauce on it. With or without toppings. Some might debate this, and that's fine. Or you could have a pizza with just cheese on it. With or without toppings. I tried one of those Pizza Hut "Mia" pizza, which has a lesser quality sauce and it just tasted horrible. I usually get extra sauce when I get pizza. That's like still taking the crust off bread... depends on the pizza. If it has a really nice crust I'll be more inclined to eat it, but a hard tasteless crust doesn't cut it for me. When I try to find the really good pizza joints around the country it is the crust that is the first thing I see if they can get right. I good NY thin crust slice is hard to beat.
