That's what I know to be true about both McDonald's and Walmart. There is a large market for lesser quality.....and getting bigger all the time unfortunately. in your line of work you clearly see the different levels of quality and service provided by different companies and the people that can't afford Mortons or Ruth Chris for a steak.....retail is no different.
