Embed a 1 pixel by 1 pixel transparent gif in your e-mail via a HTML image tag, and host the gif on a webserver that you either host or where you can get to the access log. When they open the e-mail, unless they have HTML rendering turned off, it will have to make a call to your webserver to get the image, and you'll see that in your server log.
