I have some kind of cheese in almost every dish I make, plus cheese to eat with crackers my favorite snack.

Me too, and I actually thought about making a cracker thread 😄...cheese & crackers has been my afternoon snack since I was a kid...it went into overdrive when I was trying to gain weight! Deviled ham on em too.

I think a well-aged, nutty gruyere is the key ingredient in more of my favorite cheese dishes than any other cheese, so that's my choice.

That said, there are few things more satisfying than a well-thought out and diverse cheese board.  I want them all...

Yeah, forgot about the smoked gouda. When I was in the hospital, hubby started buying it in big blocks. A nice chunk on the side of dinner is common now, I don't buy the slices anymore.

This is my answer too.  I like all of the options listed except for cottage cheese.  But smoked gouda is my go to cheese.  Smoked cheeses are so great.

All cheeses are wonderful.  I offer a top 5, unranked.

Blue.  Gotta be really dank, tho.

Muenster.  Perfection on a turkey sandwich, melts perfectly.

Manchego.  Spanish charcuterie is everything.

Brie.  I like it creamy.

Whole Milk Mozz.  The perfect flavor delivery device.

Great list.  I feel like Parmesan deserves a spot in it though.  I don't get it very often because of the price, but it's so great in every usage.

We also need a list for New World cheeses so all of those amazing Mexican cheeses can get love.

Grana padano is pretty amazing. Gotta co-sign with Beal on manchego. Lately I've been making burgers with manchego, fig jam, caramelized shallots. The bomb.

True story...Phil Mickleson’s nickname is FIGJAM.

a single one had to be chosen, then Mozzarella is the correct choice, because it makes pizza.

Buffalo Mozzarella in a genuine insalata caprese is a steady part of my diet when I venture through Southern Italy. Unfortunately American fresh mozzarella is made from cow's milk. Good, but not the same.
