The Grilling and Cooking Thread

Put on a brisket flat this morning. It was a chilly start at 7:30 am. Used charcoal and chunks of pecan & maple.

I dumped a can of beans in a casserole dish with some cooked bacon, sweated onions & garlic, molasses,  brown sugar,  Dijon mustard, Worcestershire,  catsup, maple syrup,  bbq sauce,  pan drippings, (from the brisket), and a splash of bourbon.  I stuck them in the smoker, an hour ago.

She's holding steady at 175, so I wrapped it when I stuck the beans in the grill.

Ok, boys and girls. It’s my birthday today so I was a bit stumped on how to do a low carb birthday cake....#NailedIt

 

Beautifully cooked to medium rare. Now that I’m confortable working with this I’m going to bump up for a higher marbeled grade, but this was still super!!

Butter and herb paste: fresh basil, oregano, rosemary, sage, herb de provence, salt and pepper.

Herb stuffed crispy skin porchetta and asparagus! Basil, rosemary, sage, garlic. I took two of the dark meat pork tenderloins and rolled them into the pork belly, tied and roasted to 160 degrees internal. Baked on a rack in the pan at 375 the skin turned out amazingly crispy! Unfortunately, I tried to get it more by broiling it for a bit and it burnt some of the skin...not happy about that but the herb infusion in the pork gave it awesome flavor! I managed to salvage the skin by scraping the worst of the burnt. I will be doing this again to perfect it.

Making tuna noodle casserole tonight. Since I am moving, my pantry isn't well stocked.

 

No mushroom soup and no wide noodles.

 

So am using elbow macaroni, sliced canned mushrooms, heavy cream, tuna, grated parmesan, and frozen baby peas. On the stovetop. Plus some parsley and oregano. 

 

I hope it turns out. Fingers crossed!
